Grown by Huver Castillo at El Paseo in Nariño. The coffee undergoes a 20-hour pre-fermentation in the cherry before it is depulped and sealed in steel tanks for 210 hours of anaerobic fermentation. The result is intense floral notes, juicy citric acidity, and complex fruit notes.
