An anaerobic honey Caturra Chiroso from La Reserva, a 380-hectare farm in Antioquia, Colombia, restored by Juan Felipe Ocampo in 2018 and now growing more than 21 exotic coffee varieties alongside a protected nature reserve. Cherries are float-sorted, fermented in cherry for 36 hours, depulped and fermented anaerobically in 200-litre containers for 96 hours, then dried for about 8 days. Recommended for filter brewing.
