
Grown by Huver Castillo at El Paseo in Nariño, this coffee undergoes a 48-hour pre-fermentation in the cherry before being pulped and dried. It is then sealed in steel tanks for 10 days with the pulped coffee cherry for anaerobic fermentation, resulting in a rich berry forward cup.
