El Pacho is a specialty coffee roaster in Toronto's Financial District, just across from Union Station, founded by a Ukrainian family and coming up on its two-year anniversary.
Their approach is classic and unfussy: they roast in-house and pour single origin only, no blends. Even the syrups are made from scratch, with nothing artificial in the cup. Two grinders sit side by side, each loaded with a different origin. They have a soft spot for Ethiopian and rotate through coffees like from Colombia and Peru, pulling espresso a touch darker at medium roast while keeping pour-overs bright and light.
Beyond their own roasting, they share guest coffees from roaster friends in Europe and from their travels (beans carried back from Tokyo one winter), turning the pour-over bar into a small window on what's exciting in coffee worldwide. Whoever's on bar, open to close, the aim is the same: one consistent cup, made entirely their own.
