Grown at 1,000 to 1,200 metres in the state of Bahía, Brazil, this coffee comes from the Baixadão and Campo Belo farms, with Olam as Syra's local partner. After harvest the cherries are transported in closed trucks roughly 50 km to the drier Caatinga biome, undergoing a controlled low-oxygen fermentation during the journey before drying. Scored 84 and roasted for espresso.
