Sugar Mountain features coffees using experimental and innovative processing methods, such as low oxygen or anaerobic fermentation in sealed barrels, and sometimes co-ferments or carbonic maceration. This process enhances fruit-forward and deep funky notes. The Intango process used involves fermenting the best quality cherries in clay jars, which are porous and help to harbor specific local microbes, resulting in a cup that is intensely fruit-forward with notes of red plum, jammy grape, and a lingering Turkish Delight, light caramel, and vanilla ice cream finish.
