This coffee from Sochiapam, Oaxaca, has improved in quality through selective harvesting, longer fermentation, and better infrastructure. The result is a coffee with mild acidity and strong cocoa or cooked sugar backing, featuring notes of candied cherry, amaretto, and pecan pie, finishing with milk chocolate, caramel, and praline.
