
A Pink Bourbon from various regions of Colombia (Tolima, Huila and Caldas), processed at El Vergel Estate using a honey process with a five-day banana co-fermentation. The process includes a 48-hour anaerobic pre-fermentation, yeast and banana co-fermentation, patio and silo drying and a 30-day rest. Notes of banana gum, cherry and grape jam.
