
Misael Guarnizo is the owner of Finca El Mirador near Tarqui in Huila. The coffee is picked and left to rest in its cherry for 12 hours before being depulped and fermented for 60 hours. After fermentation, it is washed and dried using both parabolic dryers and African raised beds.
