This coffee is processed through anaerobic fermentation inspired by carbonic maceration of wine. Only the ripest cherries are selected and placed whole in sealed stainless steel tanks with a valve that allows CO₂ generated during fermentation to escape while preventing oxygen from entering. This allows for a longer and controlled fermentation, reducing defects. The fermentation lasts approximately 4-5 days, controlled by the tank temperature. Afterward, the cherries are dried on raised African beds for 15-18 days, rested, and finally undergo dry processing (hulling, sorting, and manual selection) before export.
