Qabballe means 'cold', a reference to the brisk mountain air high in Uraga, Guji, where fifteen smallholder farmers cultivate local heirloom varieties 74110 and 74112. The cold air slows cherry ripening, concentrating sugars and shaping the lifted fruit and brightness that make this coffee distinctive.
