A decaffeinated single-origin coffee from several high-altitude farms in Caldas, Colombia, developed as an experimental lot designed specifically for decaffeination. High-grown beans with natural acidity balance the characteristic sweetness of decaf, and since 2024 a mechanical silo re-drying step stabilizes the bean. The sugarcane (Swiss Water) process uses pure mountain water to remove over 97% of the caffeine without chemical solvents.
