A single-origin Colombian coffee from the Nogales farm of the Hernandez family in Bruselas, Huila, sourced via Apex Coffee Import. The cherries are briefly dipped in hot water, depulped retaining their juice, then fermented for seven days with selected yeasts, giving a complex cup of dried fruit, citrus acidity and banana.
