This coffee is produced through a natural process, drying the cherries with the pulp intact. A double fermentation protocol is used, starting with an aerobic stage and continuing with an anaerobic phase. The aerobic fermentation adds complexity to the profile, while the anaerobic enhances the notes of blackberry and other ripe fruits. In the cup, a creamy body and well-balanced fruity intensity are perceived.
