A washed, anaerobically fermented lot produced by the Gasca Brothers in Bruselas, Pitalito, Huila, Colombia, using the Pacamara variety. After harvest the cherries undergo a 48-hour oxidation, a 60-hour anaerobic fermentation in cherry, depulping, and a second 60-hour anaerobic fermentation in mucilage with recirculated must. Fermentation is stopped by a hot-and-cold water quench, and the coffee is sun-dried under canopy, finished in a silo and rested for at least 10 days.
