This coffee is a single-varietal microlot from Jairo Quinones, who has been surrounded by coffee farming his whole life. The coffee is grown on a 5-hectare farm with about 22,000 trees. The cherries are harvested every 20 days, depulped the next morning, and fermented underwater for 24 hours before being washed and dried in parabolic driers.
