
A washed Pink Bourbon from Villamaria, Caldas, Colombia, grown at 1,650 metres and processed under the Coffeelipe project of Juan Felipe Restrepo, a modern mill with a lab, bioreactors and controlled fermentation. The cherries undergo a short 12-hour anaerobic fermentation before careful pulping and washing, then about 24 days of patio drying. Notes of apricot, jasmine, orange and honey.
