
A co-fermentation washed coffee from El Paseo farm in Buesaco, Narino, produced by Andres Martinez (60% Pink Bourbon, 40% Castillo) at 1,850 meters. After a 36-hour whole-cherry fermentation the depulped coffee is fermented with watermelon, watermelon extract, and panela syrup over a 10-12 day controlled tank fermentation, yielding notes of watermelon, lime, and green tea.
